Pineapple and Cream Brazo Gitano (Swiss Roll Cake)

From my research I’ve learned that Brazo Gitano is a really popular dessert on the island. The literal translation for this cake is “gypsy’s arm” There are many different theories about the origin of this cake. However, we know that Puerto Rican’s have taken this swiss roll cake and made it their own.

This cake is so airy and light. It is a true sponge cake. Traditionally on the island, the cake is filled with guava. I’ve read about many other popular fruit and cream fillings. I decided to try a pineapple cream filling and it turned out really good!

I made a pineapple curd from fresh pineapple juice. I filled the cake with the the pineapple curd and whipped cream. It is a light, airy and tropical dessert.

This order will include three slices of Brazo Gitano.

Cake: Cake flour, eggs, baking powder, sugar, vanilla, butter

Pineapple curd: pineapple juice, cornstarch, eggs, butter, sugar, lemon

Whipped cream: heavy cream, vanilla, powdered sugar

Topped with powdered sugar
