Lemon Blueberry Breakfast Bread


Ok let’s be honest, this bread is like having dessert for breakfast. I mean we won’t have it everyday, but its a nice treat. This bread is so moist and bursting with brightness from the lemons. The blueberries are perfection in this recipe. The method we use is similar to making a muffin, very simple. We finish it by drizzling a little glaze on top and we’re good to go. Lemon Blueberry Breakfast Bread

Ingredients
  

  • 1 cup Sugar (200 grams)
  • 1 Lemon
  • 8 tbsp Butter (113 grams)
  • 2 Eggs
  • 1 tsp Vanilla (6 grams)
  • 2 cups All purpose flour (270 grams)
  • 1/2 tsp Salt (3 grams)
  • 1/2 cup Whole Milk
  • 1 1/2 cup Blueberries

Instructions
 

  • Preheat oven to 350 degrees
  • Combine zest of 1 lemon, sugar and butter to a mixer with a paddle attachment. (Don't worry if you don't have a stand mixer. You can mix by hand or use a handheld mixer)
  • Mix for about 5 minutes or until light and fluffy. Be sure to periodically scrape down the bottom of the mixer.
  • Add the eggs (one at a time) and vanilla to the mixer. After each addition mix until combined. (about 1 min) You will probably need to scrape the bottom of your mixer.
  • Sift all dry ingredients together in a separate bowl. Whisk together.
  • Add the juice of the lemon you previously zested to the milk. (strain out seeds)
  • Alternate adding the dry and wet mixtures to the butter, sugar vanilla and eggs. After each addition mix just until combined. Don't overmix. This will look like a thick cake batter
  • Add a layer of the batter to the bottom of a prepared loaf pan 10x 5. Spread evenly. Then mix in the blueberries to the remaining batter and add to the top of loaf pan. (shown in video)
  • Bake for approximately 1 hour or until golden brown. Check with a toothpick prior to removing from oven. If you stick the toothpick in the cake and it comes out clean it is done
  • Let it cool completely before you remove from pan. Add the optional glaze (I encourage the glaze lol) and enjoy!

Notes

Optional Cream Cheese Glaze 4 tablespoons of room temperature butter 4 ounces of room temperature cream cheese 1/2 teaspon of vanilla juice of 1/2 lemon 1 cup of powdered sugar *1-2 tablespoons of heavy cream or milk.
