Brown Butter Apple Cinnamon Muffins


Its something about brown butter that just makes everything better. These muffins are pure gold! They are the perfect morning treat on a chilly fall day. Be sure not to overmix the muffin batter, that prevents them from toughening up. The spice blend adds a warmth and the brown butter gives these muffins a rich nutty flavor. Brown Butter Apple Cinnamon Muffins

Ingredients
  

  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 tsp cinnamon
  • 1 egg yolk
  • 1 whole egg
  • 3/4 cup sugar
  • 8 tbsp butter
  • 2 tsp vanilla
  • 2/3 cup milk
  • 2 granny smith apples
  • 1/2 tsp cinnamon for apple mixture
  • 1/4 cup brown sugar for apple mixture

Instructions
 

  • Prepare Apples- Wash, peel, core and dice fine. Once apples are diced toss them in brown sugar and cinnamon.
  • Brown Butter (shown in video)
  • Preheat oven to 350 degrees F
  • Sift all dry ingredients then whisk
  • In a separate bowl add egg, egg yolk, sugar, milk, vanilla and room temperature brown butter. It is very important to you allow your butter to cool to room temperature. Mix all wet ingredients until combined
  • Add wet to dry and gently mix
  • Add in the apple mixture. Be careful not to overmix
  • Place in a lined muffin tray. Bake at 350 for 20-25 mins

Muffins are best enjoyed immediately. If you don’t plan to consume them within 2 days, be sure to store in freezer
